Georgian Spicy Beef Soup (Kharcho) Recipe:
Ingredients:
- 1 lb (450g) beef stew meat, cut into small cubes
- 1 large onion, finely chopped
- 2 carrots, peeled and grated
- 1 cup rice
- 1 cup chopped tomatoes (fresh or canned)
- 3 cloves garlic, minced
- 1/4 cup vegetable oil
- 2 tablespoons tomato paste
- 1 teaspoon ground coriander
- 1 teaspoon ground fenugreek
- 1 teaspoon ground paprika
- 1/2 teaspoon ground cayenne pepper (adjust to taste)
- 1 bay leaf
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions:

In a large pot, heat vegetable oil over medium heat. Add chopped onions and cook until softened.

Add beef cubes to the pot and brown them on all sides.

Stir in grated carrots and minced garlic. Cook for a few minutes until the vegetables are tender.

Add tomato paste to the pot and cook, stirring, for 2-3 minutes to enhance its flavor.

Pour in chopped tomatoes and season with ground coriander, ground fenugreek, ground paprika, cayenne pepper, salt, and pepper. Stir well to combine.

Add rice to the pot and mix everything together.

Pour enough water into the pot to cover the ingredients. Add the bay leaf. Bring the soup to a boil, then reduce the heat to low and let it simmer until the rice and meat are fully cooked, about 20-25 minutes.
